Mr. Z's Apple Pie Crust and Filling Pastry

Sift ¾ cup flour and ½ tsp salt
Using a pastry blender, cut ¾ cup Crisco shortening into flour
and salt (mixture should resemble small peas)
Add 2 ½ Tbs cold water (by teaspoonful) tossing with a fork
Until dry ingredients are barely damp
Knead ball of pastry 3 or 4 times.
Roll out on lightly floured board to a circle 2 ½ times larger than the pie pan.
Pat into pan, folding excess into a built-up edge, then flute.
Filling
Core and peel 3 or 4 green apples (Granny Smith)
Slice the apples and sprinkle with 1/3 cup brown sugar and ½ tsp cinnamon
Place in pastry shell and add topping:
Sift together ¼ cup granulated sugar and 6 Tbs. Flour
Cut in 2 ½ Tbs butter
Spread the mixture over apples in pie shell.
Bake at 425° for 45 to 50 minutes until apples are soft and crumbs a golden brown
